About FOOD TRAILS FOOD TRAILS is an EU Horizon 2020 project bringing together 11 European cities, 3 universities, and 5 food organizations. Through Food 2030-led Living Labs, Food Trails cities co-designed and co-implemented food actions, enabling the development of systemic urban food policies to create resilient, safe, and diverse urban food systems across Europe.

I Københavns Kommune startede vi allerede i nullerne med en miljøpolitisk målsætning om 75% økologi i fødevareindkøbet. Fra det udgangspunkt er vi blevet tiltagende mere ambitiøse. I Københavns Kommunes offentlige køkkener er det et naturligt afsæt, at måltider både er madglæde, ernæring, et socialt samlingspunkt, et pædagogisk udviklingsrum og et område, hvor vi tager ansvar for vores aftryk i verden. I dag skal måltiderne være sunde, velsmagende, 90% økologiske og med et lavt klimaaftryk.
I filmen kan du høre Ritt Bjerregaard fortælle om starten på arbejdet med en økologisk omlægning og hvordan plejehjem, skoler og børnehaver arbejder med maden i hverdagen.

In this film, you see Christian – kitchen manager at the daycare center ‘Den Grønne Kastanje’ – explain why his work with food and children is so meaningful. He shares how he challenges both himself and the children’s courage to try new foods every day with green dishes from world cuisines, as well as focusing on food education to give them an understanding of where the different food ingredients comes from. In our film series ‘Meet a staff member from one of our kitchens’, you’ll meet three dedicated kitchen employees from Copenhagen Municipality’s institutions. They share their passion for cooking and show how they bring our ambitious Food Strategy to life every day – ensuring delicious, healthy, organic, and climate-friendly meals for our citizens, both young and old. They also talk about how they grow professionally, find inspiration, and create a kitchen environment where there is room for creativity, collaboration, and job satisfaction, with strong support from management and colleagues. Innovative Procurement and the Potato-kit Project, long version

As part of its sustainable procurement strategy, Copenhagen has launched the innovative “potato-kit Project,” linking the provision of food with education to open tenders to SMEs and small-scale farmers while strengthening food literacy among schoolchildren.

This initiative aims to enhance market competition, ensure value for money, promote seasonality and biodiversity, prevent food waste, shorten supply chains, and enhance food literacy - key foundations for a resilient food system.

This important project was developed and implemented through Copenhagen’s participation in the EU-funded project COACH and Food Trails.

Vores Mad- og Måltidsstrategi sætter en klar retning for de 70.000 måltider, som Københavns Kommune dagligt står for i skoler, daginstitutioner, plejehjem, sociale tilbud og bosteder, kulturhuse, idrætsanlæg m.m. Vi skal skabe gode, sunde måltider, som er 90% økologiske og samtidig reducere vores CO2-aftryk med 25%.
